Competition is a KCBS-sanctioned competitor series event.  For logistical purposes related to the Kosher requirements, this will be a 1-meat (brisket) competition

Calling all teams looking to compete.  Professionals collecting prize monies or hunting trophies, folks looking to dip their toes in KCBS competitions, synagogue men’s clubs and sisterhoods, or buddies getting together to show off what they got.

Under the Kosher Supervision of the Star-K

Details:

  • Whole, untrimmed Briskets provided to the teams by our sponsor Wolfoods, at cost
  • Garnishes for turn in provided by Capital Camps and Retreat Center
  • All equipment (18“ Weber Smokey Mountain, thermometer, coolers or warmer boxes for resting), Utensils (knives, cutting boards, tongs, spray bottles) and Supplies (Disposable pans, foil, wrap, disposable gloves) will be provided by Capital Camps and Retreat Center
  • One smoker per team
  • Pop up tent/6-foot tables/chairs provided by Capital Camps and Retreat Center
  • Chacoal and smoke-wood are not provided and are the responsibility of the competing teams
  • Coolers must be new, are not provided and are the responsibility of the competing teams
  • Optional Kosher Dinner (Sunday) and Breakfast/Coffee (Monday) available provided by our food service vendor-must be reserved at time of team registration
  • Limited trailer camping allowed (free/no utility hook ups)
  • Bunkhouse lodging –bunk bed/linens/bathroom and shower-available for $25/person-must be reserved at time of team registration
  • Optional hotel rooms available for $200/room (2 queen beds)-must be reserved at time of team registratio

Rules:

  • Star-K, our Kosher Supervisor has complete and sole authority over what is allowed/not allowed on property and in the competition.
  • Teams may not provide their own briskets or equipment as all food and equipment must be approved on site by our Kosher Supervisor Star-K.
  • No used or unsealed equipment is allowed. Must be new and sealed in the box, to be inspected by the Star K for approval, therefore Capital Camps and Retreat Center will loan for competition.
  • All food preparation must take place on site, with Capital Camps and Retreat Center-provided equipment, in our dining hall, under the supervision of the Star-K
  • All cooking must be done on Capital Camps and Retreat Center-provided smokers and tables, outside on the competition plaza, under the supervision of the Star-K
  • All preparations for turn-in must take place in our dining hall, under the supervision of the Star-K
  • No vegetable garnishes except those provided by Capital Camps and Retreat Center are allowed
  • No outside prepared food allowed on property.
  • Any packaged food must be Kosher, Hechshered, sealed, and approved on site by the Star-K
  • All rubs must be assembled on-site, and component ingredients must be unopened for inspection, and of an acceptable kosher hechsher recognized by the Star-K
  • List of Star-K approved rubs and injections will be provided ahead of time
  • Fires must be lit by Star-K mashgiach
  • Trailers not allowed on competition plaza-trailers for sleeping may be parked in our lot a short walk from the plaza
  • Only Star-K allowed beverages and alcohol  are allowed on-site.
